Rose peppercorns are the dried berries of the Peruvian pepper tree, which is unrelated to the Piper nigrum that produces black pepper. These are used whole in Nouveau Cusine or mixed with other varieties of peppercorns. The peppers have a slightly sweet/bitter taste, and are prized for their novelty and unique flavor ? they are very valuable when trying to expand the variety of flavors in your cooking.
