Arrow root is a gluten-free alternative to flour, and a good substitute for cornstarch (use two teaspoons of arrow root powder for every one teaspoon of cornstarch) Popular in the production of ice cream to reduce the formation of ice crystals, and can be used to make shimmering fruit gels.
