Green Tea Stems
All true teas stem from the plant Camellia sinensis, an attractive perennial shrub about five feet tall with gentle rounded leaves and tender twigs. Kukicha is also known as ‘twig tea’, and is made from the stems of the tea plant, rather than the leaves. Kukicha twig tea has one of the smoothest, most mellow and refreshing flavors available in a green tea. Kukicha tea is also high in calcium.
Amount of Tea: 2 teaspoons for an 8 oz cup.
Steep Time: 5 minutes plus! Unlike leaf teas, kukicha twig is not bitter, even when brewed a long time. For hot tea, around 5 minutes will give a smooth, outdoorsy flavor. Longer brews can bring out earthier notes and give a more stimulating mouthfeel. Some of the best Kukicha Twig tea is cold brewed in the fridge over night. Fill a pitcher with cool water, mix in a big scoop of tea, and let stand in the refrigerator to make an exceptional iced tea!
Water Temperature: 190 degrees F for hot tea. Cool water for an overnight infusion.
