Dill seed is the ingredient that dill pickles are named for, but the seeds are also used in many types of European and Mediterranean cooking. Eastern European and Polish cooking, especially, is famous for the great variety of dishes that use dill. The seeds are most often used whole, and will soften when cooking to be easily edible.
