Citric acid is a natural preservative and is used to add an acidic or sour taste to foods and soft drinks. Citric acid can be added as an emulsifying agent to keep fats from separating when making ice cream and caramels. Also known as ‘Sour Salt’ due to its physical resemblance to table salt. It can be used in place of salt , vinegar or lemon juice. Needed to make bath bombs, in canning and sprouting.
