Anise seed has a slightly bitter beginning and ends with a very sweet flavor. Anise has been used in cookies, sausages, soups, and sauces throughout the Mediterranean and Middle East. Use it alone, or in combination with cinnamon, cardamom, and cloves to make a spicy masala blend. It is also used in to flavor black licorice candy.
