Allspice is named for its flavor, which is often described as a mix of cinnamon, cloves, and cardamom. Allspice is used in chai recipes, spiced desserts, and in Indian and Moroccan cooking. You can tell if an allspice berry is properly dried by holding one between your fingers and shaking it. The seeds should rattle. Ours do! Use the whole berries when you want the flavor of allspice without the dark brown color of the powder.
